*I'm Paige; a culinary student & aspiring Baker living in Columbus, Ohio. Being a big girl & someone that both loves to eat & cook means that I have a lot of great recipes (some I made. some I stole) I am going to share them with all of you. If this picks up then I will start doing a daily recipe. Let me know what you think & please feel free to share these with others. Post your variations. All opinions welcome.*

Apfelstrudel (Apple Strudel) yields a honking 2 foot strudel!
This recipe requires at least 2 volunteers. Fun for families & friends.
Dough
3/4 cup Lukewarm water
1 Large Egg *lightly beaten
1/4 tsp White Vinegar
2 tbsp Butter *melted
2 1/2 cups Brad Flour
3/4 tsp salt
Melted Butter as needed
Fresh Bread Crumbs "

Filling
8 Granny Smith Apples *1/2 inch slices
3/4 cup Sugar
2 tsp Ground Cinnamon
1 1/4 cup Dried Cherries *halved or quartered
1 1/2 tbsp Lemon Zest
1 cup Ground Almonds *lightly toasted

1. Combine all ingredients for filling. Set Aside. Drain off all excess liquid before transferring to dough.

Oven: 450

Dough Method
1. Sift flour & salt together in mixing bowl. Set aside.

2. Combine water, egg, vinegar, & the 2 tbsp of melted butter. Make sure all are room temperature. Add mixture to flour in mixing bowl (hook attachment). Small firm dough ball should form.

3. Transfer dough to well floured area & knead until dough is smooth & elastic. About 10 minutes. Form dough into ball & place in covered bowl to rest for 30 minutes

4. Remove dough & roll over with rolling pin a few times to flatten it (like 4 roll overs). Clear off a large table & place a clean thin white bed sheet. Dust lightly with flour.

5. Have one person start the dough stretching process. Ball your hands into a light fist holding the dough on top of your fists. Move hands in a circular punching motion. (look up tutorials if you need. hard to explain.) Once the dough starts getting bigger have another person come in doing the same thing. Keep adding people until dough is thinner than paper & you can see through it. DO NOT TEAR.

6. Place dough on sheet & take knife to cut off the thick dough edges.

7. Brush entire surface of dough with melted butter. Sprinkle bread crumbs over butter. Drain off all filling juices & place in a log shape at end of the dough leaving 2 inches at top & sides. Fold the top & sides in.

8. Grab sheet close filling firmly. Quickly & carefully pull up & push out to roll. Butter the rolled part of the dough & sprinkle with sugar lightly. Grab sheet again & roll over again. Butter & sugar. Keep repeating until the strudel is in the shape of a big log.

9. Carefully transfer to large parchment covered sheetpan to bake. 15-20 mins or until golden brown.


This sounds a lot more complicated than it really is. There are plenty of videos online that show all of the steps. The dough is extremely fun to do with a lot of people especially if you're a big nerd like me. This strudel is definitely worth the time.
